2001 - Patron Cuisinier Edwin Roestenberg nam in 2001 dit populaire eethuis over van zijn toenmalige patron Carel Jooren, die het zo'n 20 jaar geleden begon.Sinds die tijd neemt de drukte in dit Middeleeuwse grachtenpandje alleen maar toe.
Visrestaurant de Stroper is gelegen in het centrum, aan een van de mooie grachten (voorstraathaven) die Dordrecht kent. Er is een prachtig uitzicht over het water, waar zomers bootjes liggen en de rondvaartboot start.
2012 - De keuken onder leiding van Edwin Roestenberg, kan beschreven worden als de klassieke Franse keuken als basis, in een modern jasje gestoken, waarbij veel zorg besteed wordt aan de kwaliteit van de seizoensproducten, die veelal biologisch zijn.
Edwin Roestenberg zorgt voor een goede prijs/kwaliteit verhouding, waardoor iedereen erg enthousiast is. In het restaurant zorgt Mark Bakker met zijn jonge team voor de gasten.
