Leerdammer heeft een rijke kaashistorie die bijna een eeuw geleden zijn oorsprong vond. In 1914 richtte de dan 21-jarige Bas Baars het bedrijf Baars Kaas op. In 1970 ging Baars op zoek naar nieuwe kaassoorten samen met het Nederlands Instituut voor Zuivel Onderzoek. Er kwam steeds meer vraag naar bijzondere kazen om mee te variëren en voor Emmentaler bestond een grote markt.In 1976 werd dan ook Leerdammer-gatenkaas uitgevonden, een heerlijk romige kaas met een milde, zoete en nootachtige smaak. Kaas van Leerdammer is een kruising tussen Goudse (romig) en Emmentaler-kaas (mild, zoet en nootachtig). Zo werd een product gecreëerd dat de voordelen van beide kazen had en niet de nadelen (zoals het gewicht van Emmentaler van 80 kg).
In 20 jaar tijd werd Leerdammer kaas de derde kaassoort in grootte – na Gouda en Edam.
