Liebe Gäste und Freunde vom Restaurant Speck, dem Windy Corner und dem GartenrestaurantHier, im Speck (früher in der Speck), wurde in der ersten Hälfte des letzten Jahrhunderts Torf gestochen. Um hier hinzugelangen, wurden die morastigen Wege mit Baumstämmen ausgelegt. Daher die Bezeichnung Speck (speckig). Auch, so wird vermutet und gemunkelt, liegt im Hügel hinter dem Hangar ein Theater aus römischer Vergangenheit, darum auch der Begriff Spektakulum. Wobei eher die erste Variante zu stimmen scheint.
Schon in vorchristlicher Zeit zogen noch vor den Römern, auch die Kelten durch diese Gegend, wovon die zwei noch vorhandenen Grabhügel gegenüber dem Flugfeld Speck im Wald gelegen, zeugen.
Im Jahre 1948 wurde die Flugsportgruppe Zürcher Oberland gegründet, welche im Jahr 1953 den Betrieb von Hittnau in die Speck verlegte. Aus dem Vereinslokal wurde ein Gastronomiebetrieb, in welchem mein Vater Chrigi Kessler am 1. April 2000 das Restaurant im Speck eröffnete.
Das Restaurant wurde 2003 mit einem Gartenrestaurant, einem Selbstbedienungskiosk (Windy Corner) und einem Spielplatz erweitert. 2015/16 wurde der ganze Betrieb renoviert und mit einem Saal (Tynwald Taverne) für bis zu 60 Personen vergrössert. Mittlerweilen arbeiten im Betrieb in der Sommersaison 13 Personen und es werden jeweils 1-2 Lernende ausgebildet.
Das Ziel von Chrigi war es «ä glatti Beiz für alli» zu erschaffen, was er mit viel Hingabe und Eifer erreichte.
Seit seinem Tod im Januar 2020 wird sein Lebenswerk vom ganzen Speck Team in seinem Sinne weitergeführt.
