Pauline, led by Culinary Director Abram Bissell, a Florida Keys native with Michelin-starred experience at The Modern and Eleven Madison Park, celebrates South Florida’s coastal bounty with bold, precise, and vibrant Caribbean and Latin flavors. The seafood-driven menu, crafted without seed oils, features Jonah Crab Claws, Conch Ceviche, and Key West Pink Shrimp from the raw bar; Rock Shrimp Fideos and Caviar Tostada among small plates; and entrées like Lobster & Mussel Sancocho and Turbot Encendido. Named for Pauline Baker, muse of cocktail writer Charles H. Baker Jr., the restaurant channels their spirit of travel, romance, and Deco-era Miami.
