Its important to find the best ingredients possible, source locally and seasonally. Equally important is what you do with the ingredients you have. Making sure that each step of cooking and transforming the raw ingredients into food is done with passion and love of the craft. To me food is more than just what you eat. Food brings people together. It is meant to be experienced, enjoyed, savored and shared. It is simply my responsibility to pay respect to that food and present it in the best way I know how to.
