The bistro's owner, a food blogger and a hotel industry veteran, had been diagnosed with an autoimmune condition about eight years ago. With the guidance of her doctor, she switched her food repertoire to a gluten free and dairy free diet and the results were so convincing that her entire family followed suit. Fresh Levant Bistro opened for business in Lafayette Village in late October 2015. The concept is centered around Levantine cuisine, the area of the eastern Mediterranean coast and is 100% gluten free.The menu offerings are diverse and all dishes are noted whether they are dairyfree,nut-free,vegan or vegetarian. The bistro is proudly committed to offering organic foods,teaming up with local farmers and regional suppliers who share the vision for organicpractices and earth-friendly principles. Selections vary with the seasons, and everything ismade from scratch and fresh daily. The meats are grass-fed, poultry and eggs are organic,and dairy products are grass-fed & organic.
