DESCRIPCION DE PROCESO DE ELABORACION DE PULPA DE CHILES GUAJILLO, ANCHO, PASILLA, ARBOL. 1.-RESEPCION DEL PRODUCTO: El chile es pasado por un tornillo donde se le retira toda materia ajena al chile tales como piedras, terrones, metales, etc. 1.1.- DESCABADO:Es retirada le pata y semilla del chile quedando la pura pulpa. 2.- LAVADO:El chile es lavado con sistema de emerción agitándolo. 3.- SECADO: Es con ventilacion con aire caliente. 4.- MOLIDO: El molino es de acero inoxidable en su totalidad. 5.- CONTENEDOR: Del molino pasa a una contenedora cónica en acero inoxidable. 6.- CALIDAD: Tono de calidad se realiza en la molienda es decir la medida o granometria de chile. 7.- ENBASADO: En bolsa de carton con poiletileno selado con hilo mtorzal y aquintalado. 8.- LA SANITIZACION: Es realizada con una mezcla de gas ETO2 óxido de etileno 30o/o, poniendola en contacto con el chile y asi mismo matando los microbios tales como:AIROBOS, MESOFILICOS, HONGOS, SALMONELA, FECALES, FILACOCOS, ETC. USO PRINCIPALES:AGENTE DE SABOR LA ELABORACION DE LAS OTRAS CALIDADES ES EL MISMO PROCESO DE LIMPIESA ECEPTO QUE ESTE SI LLEBA CABO.
